Peter,
On the networking side, in the Cisco world you can do a couple of
things to mitigate the risk of this type of attack.
Attack Mitigate
Spoofing the DHCP server DHCP Snooping and Port Security
Spoofing the default gateway Dynamic ARP Inspection (DAI)
Spoofing an IP address IP Source Guard
