I have found these books to be useful.

Special Ops: Host and Network Security for Microsoft, UNIX, and Oracle
(Paperback)
Hacking

Hacking Exposed 5th Edition (Hacking Exposed) (Paperback)
by Stuart McClure, Joel Scambray, George Kurtz

Both Hacking Exposed and Special Ops has got excellent reviews from some
well known and respected IT security profiles. Both can be found at amazon.

Just my 2 Euro's.
