('binary' encoding is not supported, stored as-is) Security Cloak indeed will masquerade windows as linux but there is a possibility to identify the target by running a XMAS scan.
XMAS scans against a windows box will show all ports as being closed. So if a SYN scan shows open ports and XMAS scan came out with all ports closed then it should be a windows box.
