Hi Tom,

I've used USB Snoopy for this in the past. I haven't used it in a while
and I know there are a few different versions floating around. I think
http://www.wingmanteam.com/usbsnoopy/ is the one I used.

Sysinternals PortMon might be able to do USB, but I've never tried it.
